Homemade Granola

One of my new years resolutions for 2012 was to be more adventurous in the kitchen and make the effort to cook more often. Luckily I’ve been helped along the way with lots of recipe books from friends and family. My skills rarely extend past simple and obvious dishes like Spaghetti Bolognese so every weekend I am going to make something new in my quest to become an accomplished cook.  I wanted a quiet weekend and it seemed the perfect opportunity to bake something new. I came across this great and very simple granola recipe on The Vegan Stoner (http://theveganstoner.blogspot.co.uk/). I’m amazed at how well it turned out for such a simple recipe, it makes a great (and relatively healthy) mid morning snack- try it as a yoghurt topping with fresh berries.

As well as the trail mix I add in dried Apricots and 2 tsp. of cinnamon and 1 tsp. of vanilla.
