Tomato, feta and basil skewers

This is a bit of a cheat recipe since it actually doesn’t actually require any cooking…but the sun is shining so the less time spent in the kitchen, the better. This is the perfect quick, vegetarian recipe for picnics and BBQ’s. This recipe is just as delicious with black olives and cucumber instead of basil.

Method:
Cut the feta into 40 even squares (approx 350g) and place in a bowl, pour over 120ml olive oil, 1 unwaxed lemon (zest only), 2 tablespoons freshly chopped oregano and 1 teaspoon cracked black pepper. Leave to marinate for 2 hours.

Skewer the feta, tomato and basil leaves in order. Simple and delicious!
