Vegetarian Lasagna

After a particularly heavy weekend, celebrating the sunny weather and a friend’s birthday with a BBQ, there is nothing I am craving more than a vegetarian lasagna. I found this recipe a couple of months ago and it’s been in solid rotation ever since. Lasagna is one of those incredibly easy dishes you can prepare well in advance of a dinner party and simply pop it in the oven when guests arrive. You can use any vegetables that take your fancy but my particular favourites are aubergine, red pepper, courgette, spinach and mushroom.

The method is simple, cook all vegetables (including garlic and onion) together with a tomato sauce, layer in a deep dish with sheets of lasagna and pour over a white sauce/ creme fraiche (I prefer a shop bought Dolmio for ease), sprinkle with cheese, Parmesan works best here, and bake in oven for 30 minutes. Serve with garlic ciabatta and a side salad.
